Banana & Cinnamon Gluten/Sugar-Free Pancakes

Here is my second sugar and gluten-free recipe. The first one was my Banana & Chocolate Chia Seed Pudding that I’ll link here, and this one is a little more proteinaceous. It makes a fantastic breakfast or just a great sweet treat for those of you that love the sweet stuff but are trying to be healthy. Like my first recipe, it’s all natural, free of any nasties, gluten-free and sugar-free.

You will need the following (for 1 portion):

1 ripe banana (the riper the better)
2 eggs
1 tbsp Cinnamon powder
1 tbsp Vanilla extract (and I mean the good stuff – not vanilla essence because it’s synthetic and tastes of nothing)
Coconut oil
Any fruit of your choice to garnish

1)   Mash up the banana into a smooth paste
2)   Mix in with the egg, cinnamon and vanilla extract – there’s your batter.
3)   Melt some coconut oil in a pan and use this to fry up your pancakes. I like to make a stack of mini pancakes so I take quite a small amount of batter at a time.
4)   Finally drizzle honey and fruit of your choice over the pancakes et voila!
